S’mores are a camping and summer essential. I love how they bring back so many fun memories of camping and summer fun. However, they do not need to be limited to just summertime. Instead, you can make this yummy s’mores brownie recipe anytime of the year!
This brownie variation is a simple and easy dessert to make. The brownies are a simple recipe, the marshmallow layer is made with marshmallow fluff (or creme), and then you just need crushed graham crackers for the very top. I love creating simple desserts, and this one definitely hits the nail on the head!

Recipe Inspiration:
The recipe for these layered s’mores brownies came from my love of both s’mores and brownies, obviously. However, instead of creating a recipe with added mix-ins, I made these layered like my Mint Chocolate Brownies.
I love how pretty the layers can look in the pan. Although, I think you could use these layers to make your own trifle if you wanted. These s’mores brownies are simple and very beginner friendly. Plus, you could use the Best Brownie recipe below, or you could grab and make your favorite boxed brownie mix instead.

I absolutely love my Pyrex glass baking dishes. I use them all the time for so many recipes. They are my favorite for baking brownies, bars, or cakes, but they also work well for casseroles! Personally, I have two 9in. by 13 in. pans because I use them so much. Plus, I love that each pan has a plastic lid to help with storing and stacking. If you are new to s’mores, brownies, or both, here are a few things to keep in mind before you get started!
What is a s’mores dessert?
Traditional s’mores are a dessert that sandwiches a toasted marshmallow and a piece of chocolate between the two halves of a graham cracker. It is a classic treat around campfires, especially with Girl Scouts, Boy Scouts, and campers of all ages. This treat has been popular for a long time, and it doesn’t show any signs of going anywhere.
What does s’mores stand for?
The word “s’mores” is a contraction of the words “some” and “more”. People now refer to the graham cracker, marshmallow, and chocolate sandwich dessert as a s’more instead of saying “I want some more”.
Can you make layered s’mores brownies with a brownie mix?
Yes! You can use a boxed brownie mix to make your s’mores brownies if you want. To do so, follow the directions on the box to make and skip the steps to bake the brownies in the recipe below. Just be sure to let the brownies cool completely before moving to the marshmallow layer!
Can you make homemade marshmallow instead?
Absolutely! You could totally make your own marshmallow layer at home, but I have found that using the marshmallow creme is a simpler way to create this treat. Also, for beginner cooks and bakers, I recommend that you start with the marshmallow creme unless you feel confident with making homemade marshmallow fluff.
Tips before you start…
- Be sure that the brownies have cooled completely before you add the marshmallow fluff layer. If you spread the marshmallow too soon, it can cause it to bubble and then it will harden, which makes slicing difficult.
- You can use homemade graham cracker crumbs like me, or you could just break the graham crackers up into larger chunks. Either way will be delicious!
- Also, you can crush up the graham crackers into crumbs yourself or purchase graham cracker crumbs if that’s easier.
- If you really want to up the chocolate level in this brownie dessert, then you could add chocolate chips to the batter before baking. Another option would be to add them on top of the graham cracker layer as well.
- When serving, I suggest that you cut with a sharp knife and then wipe off between cuts. This helps create cleaner cuts.
- These brownies should be stored in a covered container and should last about 3 days.

Supplies
Brownies:
- Butter
- Granulated Sugar
- Vanilla
- Eggs
- Flour
- Cocoa Powder
- Baking Powder
- Salt
Marshmallow:
- Marshmallow Fluff
Graham Cracker:
- Graham Crackers

How to Make S’mores Brownies:
Brownies:
First, preheat your oven to 350 degrees. Grease your glass baking pan well. (I use the butter wrappers to do this.)
Melt the butter. Then in a large mixing bowl, blend the melted butter, sugar, and vanilla together.
Next, add all of the eggs to the same bowl, and beat the mixture well.
Pour in all the rest of the ingredients for the brownies, and mix well. The brownie batter should be slightly thick and have no flour pockets.
Use a spatula to pour the batter into the greased glass pan and smooth it out evenly.
Place in the preheated oven to bake for 25-35 minutes. Insert a toothpick to check doneness.
Remove from the oven, and let cool completely.
Marshmallow Layer:
Once the brownies have cooled completely, you can use an icing spatula to spread the marshmallow fluff over the brownies evenly.
Graham Cracker Layer:
Crush up the graham crackers into crumbs inside a Ziploc sandwich or quart size bag.
Using a spoon, sprinkle the crumbs over the whole top of the marshmallow layer.
