If you love mint, chocolate, and brownies, then you are going to love this Mint Chocolate Brownies recipe! With a brownie base, a minty icing, and a topping of semi-sweet chocolate, these decadent brownies are a hit anytime of the year!

Chocolate and mint are two of my favorite flavors, and when you pair them with brownies, I am pretty much in heaven. This recipe definitely hits all the marks, and it is a perfect dessert for entertaining or for family!
These Mint Chocolate Brownies are made up of three layers. The bottom or base layer is brownies. In my recipe, I show you how to make my favorite brownies from scratch. However, if you want to use a boxed brownie mix, then go for it!
The second layer is the mint icing. This is my favorite layer to make since it is not something I make regularly. With just a little mint extract and some green food dye (optional), you can whip up this light and fluffy icing in just a few minutes!
The final layer is the semi-sweet chocolate, which just takes these brownies up in decadence. All you need to do is melt some semi-sweet chocolate chips for this topping. Then you will chill and serve!

Can you make mint brownies with a brownie mix?
Yes! To make mint chocolate brownies with a mix, you simply need to follow the directions on the box to make the brownies. Then follow the directions below for the mint icing and chocolate layers. That’s it!
Can you freeze chocolate mint brownies?
Yes, you can! I actually really enjoy storing and serving them from frozen. However, I do recommend that you pre-cut the brownies into serving sized pieces before freezing. Once frozen, they can be difficult to cut, especially through all three layers.
When should you make mint brownies?
Mint brownies are the perfect dessert for entertaining! I usually make St. Patrick’s Day mint brownies, but they would also be great for Christmas brownies or even for summer parties.
Are these Mint Chocolate Brownies difficult to make?
The Mint Chocolate Brownies are easy to make as long as you have a little patience to allow each layer to cool or chill completely. Making the layers is simple, but waiting to eat them is difficult.

Brownie Layer:
- Butter
- Sugar
- Vanilla Extract
- Eggs
- Flour
- Cocoa Powder
- Baking Powder
- Salt
Mint Icing Layer:
- Powdered Sugar
- Butter
- Mint Extract
- Heavy Cream
- Green Food Coloring (optional)
- Icing Spatula (optional)
Chocolate Layer:
- Chocolate Chips
- Butter
Favorite Tool:
My favorite tool for these mint brownies is my icing spatula! I love it because it makes it so easy to get each layer evenly spread out. Plus, it can be used for serving too! Grab one for your kitchen too with my affiliate link!

Tips for Mint Chocolate Brownies:
- It is very important to let each layer cool or chill completely. This will make it easier to spread the second and third layers on without too much difficulty or accidentally mixing the layers together.
- You can make mint brownies from a brownie mix, or you can use the from scratch brownie recipe below. Either way works!
- To get the mint topping for the brownies fluffy, you will want to whip the icing on high. Doing so will whip the heavy cream into a whipped cream texture and make the icing taste and feel light.
- If you do not want to store them in your pan, you can line the brownie pan with parchment paper before baking. Then once you have added all the layer and chilled, you should be able to remove the mint chocolate brownies from the pan and slice up easily for storing or serving.
How to Make Mint Chocolate Brownies:
Brownies:
Start off by preheating the oven to 350 degrees. Grease a 9in. by 13in. pan well.
Blend the melted butter, sugar, and vanilla until incorporated.
Then add all of the eggs to the same bowl and beat the mixture well.
Pour in all the rest of the ingredients, and mix well. Your batter should be somewhat thick and have no flour pockets.
Use the spatula to pour the batter into the greased pan and smooth it out evenly.
Place in the preheated oven, and bake for 25-35 minutes.

Remove from the oven, and let cool completely.
Mint Icing:
Using a stand or hand mixer, mix softened butter, powdered sugar, and mint extract until it is sandy in texture. (This may take 2-3 minutes.)
Slowly add the heavy cream while mixing the icing on low until incorporated. Then whip on high until light and fluffy. (2-4 minutes depending on speed) Then add the food coloring, and continue to whip until incorporated.
You can use an icing spatula, or another tool, to spread the mint icing evenly over the cooled brownies. Then immediately place in the fridge to chill. (15-30 minutes at least. More time may be needed.)

Chocolate Topping:
Place the chocolate chips and butter in a heat safe bowl. Melt either by microwaving for 30 seconds at a time and stirring until melted completely, or you can melt over a double broiler. Chocolate should be smooth and glossy when melted and ready.
Pour over a chilled mint icing layer and spread quickly and carefully. Be careful not to mix the layers!
Put back in the refrigerator and let chill completely, which may take up to an hour.
Finally, use a sharp knife to cut your mint chocolate brownies up into serving pieces. Enjoy!
