My family and I love breakfast for dinner. However, I am the only one who really is hungry in the morning. My hubby and little one both take a little time to wake up before they are ready to eat. Because this does not always work with our morning routine, I decided to start doing more breakfast for dinner meals. This way we get the tasty breakfast food, but everyone can enjoy it!
One of the staple breakfast foods in our home are scrambled eggs. My little one loves them, and I like that they are a healthy protein source. Plus, you can easily mix things in with eggs to add more nutrition. That is how this recipe was created.
While my family loves scrambled eggs and breakfast food, they do not always love leftovers. Even my Easy Cheesy Skillet Potatoes sometimes get snubbed when reheated. What I have done with this recipe is recreate the leftovers into something that my family enjoys!

Yes, you could make this recipe with over easy or even baked eggs. To do baked eggs, follow the directions below up to adding the eggs. When you add the eggs, create little depressions in the hash for them to sit in. Then bake at 350 degrees in the oven for about 10 minutes or until the eggs are set.

Yes, you can make this recipe with fresh ingredients instead of left-overs. I suggest that you look through the options and choose one meat and one dense vegetable to make your hash. Then you can add from there as you wish!

Yes, you could make this recipe meat-less, or you could use a meat alternative. I have created a hash with just eggs and vegetables before, and it is still very delicious. When you use a meat alternative, be sure to check how to properly prepare it as I have not used one myself in this recipe.

- Taco Meat, Sausage, Bacon, or Another Meat
- Potatoes, Peppers, Corn, Brussel Sprouts, Spinach, or Other Vegetables
- Beans or Lentils (optional)
Fresh:
- Oil or Butter
- Grated Cheese
- Eggs
- Salt & Pepper
Tools:
- Skillet (I use a 10 in. Cast Iron)
- Wooden Spoon or Spatula
How to Cook a Scrambled Egg Hash with Leftovers:
Start by heating your cast iron skillet over medium heat. Add a little oil or butter if your meat choice is lean.

While your skillet is heating up, add the leftovers all together. Reheat them in the skillet. You will want to mix them often to ensure even heat throughout.

Once the leftovers are heated all the way through, add the eggs, salt, and pepper all at once, and mix together. The eggs will cook quickly, so be sure to stir well to incorporate with the leftovers.
After the eggs are cooked, you can turn the heat off, sprinkle the cheese over the top, and cover with a lid to melt. Serve immediately.

Then add any potatoes or harder vegetable to the skillet to cook for about 5-10 minutes or until soft.
Next, add any other vegetables all together. Sauté them in the skillet. You will want to mix them often to ensure even cooking throughout.
Once everything is cooked throughout, add the eggs, salt, and pepper all at once, and mix together. The eggs will cook quickly, so be sure to stir well to incorporate with the other ingredients.
After the eggs are cooked, you can turn the heat off, sprinkle the cheese over the top, and cover with a lid to melt. Serve immediately.
