Scrambled Egg Hash

Easy leftover breakfast skillet recipe!

Ingredients
  

  • 1 lb Meat Sausage, Bacon, Taco Meat, or Meat Alternative
  • 2 cups Vegetables Potatoes, Corn, Brussel Sprouts, Spinach, Peppers, or Other
  • 1 cup Beans or Lentils optional
  • 2 Tbsp Oil or Butter
  • 1/2 cup Grated Cheddar Cheese
  • 8 Eggs
  • Salt & Pepper to taste

Method
 

  1. Start by heating your cast iron skillet over medium heat. Add a little oil or butter if your meat choice is lean.
  2. While your skillet is heating up, add the leftovers all together. Reheat them in the skillet. You will want to mix them often to ensure even heat throughout.
  3. Once the leftovers are heated all the way through, add the eggs, salt, and pepper all at once, and mix together. The eggs will cook quickly, so be sure to stir well to incorporate with the leftovers.
  4. After the eggs are cooked, you can turn the heat off, sprinkle the cheese over the top, and cover with a lid to melt. Serve immediately.
