Quick and Easy Beef Stroganoff in the Instant Pot

Beef Stroganoff can be a quick and easy dinner to prepare with the help of the Instant Pot! I love how this recipe comes together so fast, and it takes a traditional, hearty meal and makes it a weeknight favorite, even when you are busy!

Beef Stroganoff is personally one of my favorite meals. Ever. Period. I love the flavor of the sauce, the tender pieces of beef, and the pasta as the foundation for the whole thing! Mmmhmmmm…. I could eat beef stroganoff sooo much.

Because I love it so much, I have tried different recipes from cookbooks or other blogs, and I have had varying results. Whether it’s just me, or possibly the recipe, I have often ended up frustrated with the results. Don’t get me wrong, the flavor piece is there! However, I usually want a thicker sauce than most have had, and it can be really difficult to get the thicker sauce when you use the Instant Pot. As a result, I made my own recipe that has helped thicken up the stroganoff sauce and still works for the Instant Pot.

The secret to getting the sauce thicker is really simple: simmer it down! Now, this might seem like a no brainer, but some recipes just leave the sauce as it is after pressure cooking. For me, this sauce is just not thick enough, so I simply take a few minutes before I add my sour cream to simmer the sauce down. Is this step necessary? Nope. Does it make the beef stroganoff better? In my opinion, absolutely!

Anyway, just like many of my other recipes, my recipe for beef stroganoff in the instant pot is really simple and from scratch, which are both wins for me! I will warn you that I make my stroganoff a little unconventional in that I don’t use chopped onion or powdered garlic. If you have read some of my other recipe posts, you know that my hubby has an allium allergy, and so while these ingredients are in lots of foods normally, I don’t add them into our recipes. Also, I am not a huge fan of mushrooms, so they will also be optional for this recipe. However, I will give you an option to add all of these if you choose. Add what options you love to your meal!

Can beef stroganoff be made with ground beef?

Absolutely! The only difference I would make to this recipe is to cook the ground beef in the Instant Pot on the Sauté function until it is no longer pink. Then I would mix the flour mixture into the ground beef until it is completely combined without any flour pockets left. Then I would add the rest of the ingredients, but you would only need to pressure cook the beef for 5 minutes. Then continue on with the rest of the recipe!

How is beef stroganoff served?

You should serve beef stroganoff over buttered wide or extra wide egg noodles! These are a wonderful foundation for this meal as the sauce sticks very well and they hold up to the flavors of the beef and the stroganoff sauce together. Plus, they are perfect for an adult’s bite size and work well with the onions and mushrooms that you can add to stroganoff as well!

Can beef stroganoff be frozen?

While I am usually a big fan of freezer meals, beef stroganoff would be a little more difficult to make freezer friendly. If you were set on it however, I would prep the meal until the point I would need to add the sour cream. I would then package it up in containers, or whatever method you choose to freeze in, and then I would freeze it. When I wanted to take it out to eat, I would reheat it slowly on the stovetop until liquid again, and then add the sour cream and complete the final steps. I have not done this meal myself as a freezer meal though, but I can see this working out well.

What do you need to make beef stroganoff:

-Beef Loin, Chuck, or Steak of Your Choice

-Beef Broth

-Flour

-Italian Seasoning

-Worcestershire Sauce

-Salt & Pepper

-Sour Cream

-Chopped Onion, Garlic Powder, & Mushrooms, sliced (optional)

-Egg Noodles, cooked & buttered

How to make beef stroganoff:

Start out by slicing the beef into thin pieces.

In a small bowl, whisk together the flour, salt, pepper, and Italian seasoning. Coat the beef pieces in the flour mixture a few at a time.Place the coated strips in the Instant Pot.

Pour the beef broth over the strips of beef and add the Worcestershire sauce as well. Add the chopped onion, garlic powder, and sliced mushrooms, if using. Place the lid on the pot, secure, set the valve to seal, and use the Manual function to cook the meat for 20-25 minutes. Let the pressure release naturally.

Take off the lid, and turn on the Sauté function. While the mixture is heating up, stir in the sour cream and continue stirring until the sauce is thickened to your liking.

Serve up over cooked egg noodles, and enjoy!

  • 1-1.5 lb. Beef Loin, Chuck, or Steak of Your Choice

  • 1/2 c. Flour
  • 1 tsp. Italian Seasoning
  • 2 Tbsp. Worcestershire Sauce
  • 1 tsp. Salt
  • 1 tsp. Black Pepper
  • 8 oz. Sour Cream
  • 1/4-1/2 c. Chopped Onion (optional)
  • 1/2 tsp. Garlic Powder (optional)
  • 1 c. Mushrooms, sliced (optional)
  • 2-3 c. Egg Noodles, cooked & buttered
