Easy Instant Pot Potato Soup

All you need is this recipe to make a delicious and quick meal that the whole family will love. Potatoes, broth, cheese, and seasonings all come together to make this a tasty dinner. Plus, I give you lots of options on how to customize this recipe for your family. It’s all here, and super easy to put together in the Instant Pot!

Potato soup is one of those dishes that I grew up with and still love to this day. I love how filling it is and how it reminds me of cold and rainy winter days from my childhood. Just add a slice of homemade bread or dinner rolls, and I’m in heaven.

Growing up, my mom would always riff on the original recipe and mix in steamed broccoli or cauliflower. Sometime she would also add ham or bacon as well! It all depended on her mood and what we had on hand. So feel free to customize this recipe to your heart’s desire and create your own favorite soup recipe! Now, I will say potato soup can be complicated. You can have loaded or baked, creamy and classic, but my style of cooking is usually just simple. While I am sure those other recipes are all delicious, I really love this recipe because the Instant Pot takes out a lot of the hassle and makes this dish a lot easier to cook, and it only requires a few simple ingredients. Plus, this potato soup recipe comes together super fast! I have even used it on weeknights, or when we are running around like crazy, because the time I have to spend in the kitchen watching it is minimal. But what I really love about this recipe is that it is made with really simple ingredients. I’m all about from scratch cooking, and this recipe fits that description nicely!

While I have and love a from scratch recipe that cooks on the stovetop, I don’t always have time to watch over everything on the stove. My little one has learned how to crawl and is now an expert at causing mischief and mayhem everywhere he goes. Not really, but it feels like it. As a result, I had to create this beauty of a recipe that has turned a stovetop favorite into and Instant Pot classic. I hope you enjoy it as much as my family does!

What potatoes are best for potato soup?

The potatoes most often used for potato soup are russets because of their starch and texture. However, I personally love to use Yukon golds, and my husband really loves reds, so you could easily use whatever potato you have on hand, just know it may impact the soup’s flavor and thickness.

How do you thicken potato soup?

If you want to thicken up your potato soup, all you need to do is make a roux by melting about 2-4 tablespoons of butter, adding an equal amount of flour, and then mixing it into the soup after the pressure cooking is done.

Is potato soup gluten free?

While you should always check the labels of your own ingredients, potato soup is usually gluten free. Simply be aware that you will not be able to make a roux, as stated above, which is not in the main recipe below.

Should you peel potatoes for potato soup?

I never peel potatoes for soup, especially potato soup. I love the added texture and nutrients that they add, and it makes the prep time a little easier when you know all you have to do is chop the potatoes, no peeling required!

What should you serve with potato soup?

When serving up potato soup, I like to keep things pretty simple. I usually serve a green, leafy salad, and I think soup is always better when served with some crusty bread, homemade or store-bought.

What toppings go well with potato soup?

For toppings that go well with potato soup, you could use:

  • fried up bacon bits,
  • chopped chives,
  • shedded cheddar cheese,
  • or even sour cream.

Most of the time though, we don’t even bother with toppings unless we already have them on hand.

What do you need to make potato soup from scratch:

-Potatoes

-Chicken Broth

-Salt

-Italian Seasoning

-White Pepper

-Cream Cheese

-Toppings of your choice

How to make potato soup from scratch:

Add the chopped potatoes and seasonings to the Instant Pot

Start off by chopping your potatoes up into bite sized chunks. Then add the potato pieces, the broth, and the seasonings to the Instant Pot.

Pressure cook everything on Manual high pressure for 5 minutes. Release pressure naturally.

Take off the lid. Turn on the Sauté function, and add the cream cheese in chunks to the soup. Stir continuously until combined.

Optional step: If you want a thicker soup, you can either continue simmering the soup until it reaches the desired thickness, or you can follow the directions above to make a roux to thicken the soup with.

Let the soup cool slightly before serving.
