Potatoes and cheese are an easy and tasty combination in this simple side dish. Whether you pair it with another dish or chop up some meat to throw in with it, this recipe is a simple comfort food that pairs well with so many meals. Honestly, the only hard thing about this recipe is making sure that I make enough since I rarely end up with any leftovers. If you can chop a few potatoes and grate some cheese, then you are ready to get cooking these Easy Cheesy Skillet Potatoes!

With fall coming on, I am so ready for more comfort foods. As much as I love summer, I get sick of making lighter dishes really quickly. Salads and such only hold my interest for so long. Hearty, comfort food on the other hand has my heart, and I love the fact that fall cools our weather down enough for me to get back into making these delicious recipes.
One of my favorite ingredients in the kitchen is potatoes. They are such a versatile vegetable, and I love getting to experiment with how I cook them as well as what flavors I pair with them in each recipe I create. A family favorite recipe that I have made over and over again in the kitchen is for Easy Cheesy Skillet Potatoes. It is one of my favorites too because it takes very little actual work time, but it yields such tasty results! I have even changed what kinds of potatoes I use or what seasonings I add depending on the meal or what I have on hand, but no matter what, it ends up tasting so good.

The origin of this recipe starts on a camping trip my hubby and I took with some friends several years ago before we were parents. While cooking dinner, my friend and I were trying to figure out how to cook up the potatoes we had in a cast iron skillet that had gotten a bit too hot without enough oil and the potatoes were sticking.
We tried several different things, but some of the sticking had just made it more difficult. However, one of us finally got the idea to add some water, and the potatoes softened right up. We were then able to add some seasonings and cheese, and those potatoes ended up being some of the best I have ever had. So naturally, I had to try making them at home, and even though I don’t do exactly the same process we did while camping, they are still so good and remind me of some great memories.
When cooking these cheesy skillet potatoes, you will have the best results using a cast iron skillet. While you can use a regular skillet, you won’t get the same depth of flavor and may need to add more oil to prevent the potatoes from sticking to the skillet too much. I almost always get some sticking even in my seasoned cast iron. However, I love the flavor that comes with the caramelization of the potatoes, so it is worth it to me. In a regular pan, you may just have to be prepared to let the pan soak before cleaning or add water to it while hot to help lift off the stuck on bits.

What goes well with skillet potatoes?
Personally, I love a good beef roast or a roasted chicken with these skillet potatoes, but you could really pair them with any kind of meat. I would also serve a side salad with them as well or some steamed or roasted veggies to round out the meal.
Why cook potatoes with the skin on?
Potato skins actually contain some nutrients that are really beneficial for you, such as magnesium and antioxidants. Also, another benefit to keeping the skins on is less prep time in the kitchen when making these perfect skillet potatoes recipe.
How do you make skillet potatoes soft?
The most time efficient way that I have found to make skillet potatoes soft is to add just a small amount of water when cooking them. This allows you to steam them, but it does not take the amount of water that is needed for boiling and makes this a one dish recipe!

Supplies:
- Potatoes
- Water
- Olive Oil
- Italian Seasoning
- Salt
- Pepper
- Cheese
- 10″ Cast Iron Skillet or Large Skillet Pan
- Wooden Spatula
How to Make Easy Cheesy Skillet Potatoes:
Start off by preheating your cast iron skillet with your oil over medium-low heat.

While the pan is heating up, chop up your potatoes in small chunks, about one inch in size.

Once you have your pan heated, add the potato chunks, seasonings, and water. Stir to evenly coat, and then cover leave them be for about 5-10 minutes or until the potatoes are soft. You will want to stir them a couple times to ensure they are evenly cooking.

When the potatoes are soft, uncover and cook for about 2 minutes. Stir again, and leave for another 2 minutes. This is what creates that lovely crispy texture on the outside.
Turn off the heat. Add the grated cheese and stir until the potatoes are evenly coated. Serve up, and enjoy!

Recipe Notes:
-You could cut the potato chunks smaller if you want. However, you will want to check them sooner than stated in the recipe.
-You can use any type of potato for this recipe, or even use a mixture of different types.
-If you love other seasonings, like garlic powder, onion powder, or rosemary, you could definitely use those as well.
-I have often mixed in whatever cheese we have on hand. I use cheddar the most, but you could easily mix in parmesan, pepper jack, or whatever cheese you have!
-If you want to garnish, you could top with some reserved cheese and chives.
