Chicken Caesar salad is sooo easy to meal prep ahead of time too, and salads can be personalized for each member of your family or group, especially if you set it up buffet style like we do. Then all you have to do is cut up the salad, shred the chicken, and set your toppings out. Plus, when you have extras of anything, it can go into a Chicken Wrap for lunch the next day!
Salads, to me, are also a great way to add in more veggies to our diet. While I love to roast veggies and serve them up as sides, they don’t always get eaten unless I make them part of the main dish. Anyone else have this problem?

Chicken Caesar salad can be healthy for you when you are choosing ingredients that are healthy for you. Now, this sounds like a no-brainer, but hear me out. When we top our salads with huge amounts of dressing, croutons, and cheese, it is not going to be as healthy for us. However, I am not saying you can’t or shouldn’t have a dressing or even toppings you enjoy. What I am saying is that you need to be aware of what and how much you are adding to your salad and just make sure you are balancing things out so you have everything in moderation. If you have dietary restrictions, be sure to follow those first though, and be sure to check with a doctor or nutritionist if you are unsure of what goes into a healthy diet.

What goes with Chicken Caesar Salad for dinner?
The answer to this question depends entirely on your taste buds. Some people love adding some garlic bread. Others love having a bit of fruit on the side to counter the savory flavors of the salad. Still others, like my hubby and I, find that we just like the salad by itself and can eat a lot, especially when you get the amount of chicken to lettuce just right!
How do you season chicken for Caesar salad?
For my family, we try to keep it pretty simple. I love to add pepper and salt to my chicken while cooking along with some Italian seasoning, because it just is so tasty. However, my hubby also loves adding freshly ground black pepper to the top of the salad itself. He thinks it makes everything come together perfectly!
How do cook chicken for Caesar salad?
How you cook the chicken for Caesar salad depends on your preference and time. In this recipe, I pressure cook the chicken for the sake of simplicity. However, many people also grill the chicken or even take fried chicken strips, chop them up, and use them instead. I don’t do that unless I have the time though, and more often than not, I just use this recipe.
What do you need to make Caesar Salad:
-Chicken Breasts
-Black Pepper
-Salt
-Italian Seasoning
-Chicken Broth

-Romaine Lettuce or your favorite salad greens
-Caesar Dressing
-Croutons
-Parmesan Cheese
How to make Chicken Caesar Salad:

Start with placing the chicken in the Instant Pot. You can use frozen or thawed chicken breasts for this.
Season with the pepper, salt, and Italian seasoning. Pour the chicken broth over the top.
On manual at high pressure, set the timer for 10-16 minutes (5-8 minutes per pound). Use the natural release method after the cook time.

Take the chicken out, and put it in a bowl. Use two forks to shred up the chicken into small pieces, or you can slice it up into chunks if you prefer. To avoid dry chicken, drizzle a little dressing over the top of the bowl and mix together to keep it nice and juicy!
Place a large amount of romaine lettuce in the bottom of each serving bowl. Then add the chicken, parmesan, croutons, and dressing. Mix together until the dressing is evenly coating everything. Then enjoy!
