Instant Pot Barbecue Chicken Sandwiches

BBQ Chicken Sandwiches are a favorite easy dinner for all times of year, and the Instant Pot makes it a super quick meal that takes very little time and effort! All you need is chicken breast, your favorite BBQ sauce, a little chicken broth, and some sandwich buns to make this tasty and fast dinner.

Every mom knows that there are days that you swear the time just flew by, and nothing you were hoping to get done was completed, and all of a sudden it’s time for dinner, and you’re wondering how on earth that happened. Can I get an amen? So today, that’s the kind of dinner I’m sharing with you. Easy, quick, simple.

Barbecue Chicken for sandwiches is sooo easy in the Instant Pot, and it is the reason I almost always have a bottle of BBQ sauce in the fridge or pantry. All you need to do is cover the chicken breast in BBQ sauce, add a little chicken broth (or even water) to thin it out for the pressure cooking process, set the timer, and walk away.

I have used this recipe when I knew I was going to be really busy in the evenings. I just set it up in the morning or middle of the day. The Instant Pot will cook it and keep it warm for me until we are ready to eat. I know some people prefer to not have their food out for very long, but we have never had a problem with it as long as we keep it on warm.

Right before we are ready to eat, my hubby or I will shred up the chicken in the instant pot, add more sauce if desired, and start making our sandwiches. Just so you know, the sauce will be thinner because of the added water. We don’t mind it, but you could turn on the Sauté function on low after shredding the chicken and simmer everything for a bit until it thickens if you prefer it. Or, you could easily shred your chicken in a separate bowl and add more sauce to the shredded chicken and mix in. Do whatever works best for you and your family!

What sauce do you need for BBQ Chicken Sandwiches?

We have used all kinds of BBQ sauce! We really love trying different kinds depending on our mood or what flavors are available. If you have a favorite type of BBQ sauce, use that! If not, then I often go with whatever sauce is on sale or new ones that we want to try. It’s really up to you!

What buns are best for BBQ Chicken Sandwiches?

Personally, we love homemade sourdough buns or rolls because the flavor compliments the BBQ sauce. However, you could easily use regular hamburger buns, hoagie rolls, or even sourdough bread slices, if that’s what you have on hand. The best buns or bread are strong enough to hold the chicken covered in sauce without becoming squishy and falling apart.

What do you serve with BBQ Chicken Sandwiches?

There are so many choices, but we really love to add some freshness to the meal with our sides. Some favorites are:

Coleslaw: I make a homemade coleslaw with our BBQ sandwiches, but you could easily grab the store-bought version. It’s a great way to balance the flavors of the meal.

Green Salad: You could do whatever types of greens you have on hand. These add some fresh flavor to the meal, which is delicious!

Potato Salad or Mac Salad: These two are very traditional sides that would be seen at almost any BBQ, so no matter what time of the year, they can be a great side!

Mac and Cheese: If you really want to add some extra heartiness to this meal, you could add some cheesy, gooey deliciousness in mac and cheese.

Steamed Veggies: It’s hard to think of a time when steamed veggies are not a great side to a meal. Just add some seasonings with a little butter, and you are ready to go!

Fruit Salad: This can be a really fun and tasty way to incorporate some fruit into your dinner menu. You can chop up some bananas, add berries, or open a can of peaches. There is no specific way you have to make this side, which makes it one of my favorites to whip up!

Melon: If you want a summer style BBQ any time of the year, you can’t go wrong with cutting up some watermelon or other melon to add to your table.

Any side you love would make a great side to serve your family!

What do you need for BBQ Chicken Sandwiches:

-Chicken Breast

-BBQ Sauce

-Chicken Broth (or water)

-Buns

-Instant Pot

How to make BBQ Chicken Sandwiches:

Start off by placing your chicken breasts into the metal pot. Cover the chicken breasts in BBQ Sauce. Try to cover the whole thing. Add broth or water to the pot. (Reserve some sauce for topping the sandwiches.)

On Manual at high pressure, set the timer for 10-16 minutes depending on how much chicken and how thick the breasts are. Allow the Instant Pot to release pressure naturally.

Shred up the chicken in the Instant Pot. If you want to thicken up the sauce, you could turn on the Sauté function for a few minutes being sure to stir continuously.

Slice buns in half, and scoop about 1/3 to 1/2 cup of shredded chicken onto each bun. Add more BBQ sauce if desired. Enjoy!
