Slow Cook Steak & Gravy in the Instant Pot

Steak and gravy over some mashed potatoes is just a classic hearty meal that really fills your belly and your soul. It’s comfort food to the max, and it’s super easy to make using the slow cook function on the Instant Pot. With just a few basic ingredients, you can make this easy, from scratch meal that will satisfy your taste buds and hungry belly.

I really enjoy cooking meals for my family. I know that many people don’t enjoy the every day ritual of cooking meals with the prepping and cleaning that inevitably become involved in the process, and I don’t always do either. What I do enjoy is learning how to take individual ingredients that are really nothing special, or not worth eating by themselves, and putting them together to make something tasty, filling, and nutritious for my family. I can’t say I’ve always been a good cook. But I do enjoy good food, and that has been a great motivator for me to learn and become better and better all of the time.

With this recipe, I love how it just takes a few really basic ingredients to make a meal! Plus, steak and gravy is sooo delicious and can be served with lots of different sides. Personally, mashed potatoes are my favorite, but you can easily serve over baked potatoes or even mashed cauliflower. Most often, I just go with sides that fit what I have in my kitchen and what will fit in my time budget.

What I really love most about this recipe though is that it is a slow cooker, set-it-and-forget-it recipe, which for this mama is a wonderful meal to be able to whip up when needed. Hearty meals don’t have to take a long time to make!

This recipe is one that was inspired and adapted from a recipe I found on Pinterest by Daily Appetite, but ever since we figured out my hubby has an allium allergy, I’ve had to change it up.

Will gravy thicken as it cooks?

Yes! Gravy, like other liquids, will be thinner when it is heated, but as you cook it, and as it cools, you will see it thicken up. If you make it from scratch, you can add some cornstarch to it if it does not thicken up as much as you want. However, I would wait until after slow cooking the steak in it. Otherwise, the thickeners may stick to the bottom and burn more.

Can you have gravy with steak?

Absolutely! In my book, gravy makes so many things taste better! Plus, if you have gravy, it’s just an excuse to make mashed potatoes, right?

What is the best steak sauce?

For me, it is definitely this gravy. The steak and gravy cook together in the slow cooker. You can serve it up with the steak. Gravy doesn’t let the steak dry out. Plus, the flavor is delicious, and it can be made from scratch!

What you need for steak with gravy in the instant pot:

Seared steak on plate
Sear the steak in the Instant Pot

-Beef Loin Steak

-Oil or Butter

-Beef Broth

-Flour

-Italian Seasoning

-White Pepper

-Black Pepper

-Salt

-Sides of Your Choice

How to make the steak with gravy recipe:

Turn the Instant Pot onto Sauté. Add oil to the pot, and let it heat up. Sear the steak on both sides for 2-5 minutes per side, flipping with metal tongs. Turn off the Instant Pot, and place the steak onto a plate.

Pour the beef broth into the pot, and scrape all the steak bits from the bottom with a wooden spoon. These will add great flavor to your gravy.

In a separate bowl, mix the flour into the oil or butter until smooth, and pour into the pot. Add the rest of the seasonings.

Turn the Sauté function back on, and mix together with a whisk until smooth. Once the gravy starts to simmer, let it do so for about 1 minute. Then turn off the Instant Pot again.

Add the steak back into the Instant Pot. Settle it into the gravy. You can even spoon some on top to make sure the gravy is all over the steak.

Use the Slow Cook function on high for 4 hours. Check it at the end to make sure it has gotten to 145° F and is cooked through. (Time may vary depending on the thickness and amount of steak you are cooking.)

Plate with some mashed potatoes and other sides, and dinner is served!

  • 1.5-2lb. Beef Loin Steak
  • 4 Tbsp. Oil and/or Butter
  • 2 c. Beef Broth
  • 4 Tbsp. Flour
  • 1 tsp. Italian Seasoning
  • 1 tsp. White Pepper
  • 1/2 tsp. Black Pepper
  • 1/2 tsp. Salt
