Use the shredded beef for the foundation of your taco!

Instant Pot Shredded Beef Tacos

For the Instant Pot series, I wanted to go with some really simple meals, and for my family, tacos are definitely on that list. We love them so much we eat them almost every week, and at least twice a month. Usually I just fry up some ground beef with taco seasonings, which we really love, but sometimes we don’t have ground beef or I have an excess of other beef cuts, which is when I make this recipe: Instant Pot Shredded Beef Tacos!

The key to making these shredded beef tacos is, of course, the meat! With beef being expensive, we have started buying large cuts of beef loin and then processing it ourselves. Doing this has allowed us to inspect the pieces and process them accordingly for the dinners we want.

For shredded beef tacos really any cut will work, but fattier cuts will have a greater flavor and are easier to get that tender texture. However, we have used less than ideal cuts, and the pressure cooker will still make them nice and tender, if you cook them right. The key to getting tender beef to shred is getting the pressure cooking time right. If the beef is still tough when you check it, pressure cook it again for another 5 minutes. This will allow you to get that tender texture without risking overcooking the meat.

Instant Pot shredded beef tacos are an easy way to get dinner on the table with little to no effort. So, follow along with me to find out how to make your own shredded beef tacos in the Instant Pot!

What tortillas should I use for tacos?

Once you have a great piece of meat, just make sure to have good quality tortillas that YOU enjoy. They don’t have to be anything specific except what you like and will eat. While tortillas are not the stars of the show, they are the stage for the flavors. If the stage falls in, it won’t matter how good the performance is. Now, we all expect tacos to fall apart, but we also want tortillas to have a good base flavor that you will enjoy building on. If you like corn tortillas, grab those. If you like whole wheat tortillas, go for it. Just make sure to grab the tortilla with the flavor you find tasty, and if you have a second, warm them up before serving.

What goes on shredded beef tacos?

There are a lot of possibilities, but some of our favorites are:

–Lettuce – shredded is best, but we also love lettuce mixes as well!

–Coleslaw – if you have a creamy coleslaw mix, it can be a tasty topping to your seasoned meat.

–Cheese – shredded cheddar or warmed queso are both delicious options.

–Sour Cream – my hubby looooves his sour cream on tacos. You can also get the Mexican Style sour cream instead, which I hear is thicker than American sour cream.

–Salsa or Pico de Gallo – a classic taco topping; salsa is cooked and can be more like a sauce, and pico is fresh veggies chopped up often with some seasonings.

–Green Verde Sauce – Some of my favorite things about tacos come in this sauce. Sooo much goodness.

–Avocado or Guacamole – A quality guacamole can be a great flavor addition. Plus, more veggies!

–Refried Beans – Depending on how you like your tacos, you could add some refried beans to the mix!

–Chopped Tomatoes – just in case you need a few extra on top of the salsa!

–Chopped Onions – the flavor will make your tacos next level!

–Chopped Jalapeños or other peppers– if you like some kick, add the jalapeños to your tortilla. If not, you can always opt for the bell pepper instead.

–Cilantro – some people prefer their tacos without, but it is a classic topping for tacos of all kinds!

–Lime Juice – This. If you do anything, do this. Lime juice just makes every bite AMAZING. That is all.

Tacos are a food love of mine, and one of the reasons is that there are just so many many options for toppings. I never have all of them on hand, but always having a few in the fridge is easy to do. I love how all of the options allow people to make each taco their own, and if you have picky eaters, they can customize it to their tastes. If you don’t see something you love on this list, then let me know in the comments below! I would love to hear about some new toppings I haven’t tried yet!
