BBQ Dinner in Foil

This tasty bbq dinner in foil takes little prep time and can be adjusted to match your tastes or what you have in the fridge! Whatever you have or whatever you like to bbq, you can make this recipe with little effort!

Ahhhh….Summer. You are so rejuvenating, so fun, and so needed. You are my time to slow down and enjoy the things that too often get pushed to the bottom of my list or forgotten in the craziness of life. Thank you Jesus for summers!

Summer is by far my favorite time of the year when it comes to fresh produce – I totally love fresh fruits and veggies! Another benefit of the beautiful weather is my hubby is totally game to grill, and that means less time in the kitchen for me. 😉

Throughout the past couple of summers, we have been grilling so much that we needed to come up with some new recipes to put in the rotation. The opportunity to create something new in the kitchen was one challenge I was willing to take on! One of the results from our experiments was this BBQ Dinner in foil, or what we often refer to as “Sausage and Veggies”. This recipe is very flexible and can be easily adjusted or riffed on to suit the size and tastes of your family. BBQ Dinner Recipe Tips & Notes:

  • Seasonings: I have not put any specific seasonings into this recipe mainly because my hubby and I change what seasonings we use quite often, or we choose to not use them at all. If you are able to buy good quality sausage, the seasoning of the sausage helps flavor the whole dish.
  • Sausage: Due to my inability to consume pork, we use chicken sausage in this recipe. However, you are more than welcome to try your own twist with different types of sausage and different flavors!
  • Potatoes: Once the foil “dish” has been put on the grill, we try to stir the dish but keep as many of the potatoes at the bottom as possible. This allows the potatoes to caramelize on the bottom of the foil and receive the most heat without sticking too much (potatoes not sticking at all is nearly impossible *insert eyeroll here*). Because everything else in the dish does not need as much heat to cook, the layering allows for similar cook times. Plus, the potatoes come out deliciously crispy!
  • Foil: You will want a thicker foil for this recipe, or you could double the layers if you have thin foil.

What do you need for a foil dinner on the grill:

  • 3-4 medium size potatoes
  • 4 bell peppers (I use a mix of colors)
  • 1/4 – 1/2 medium white onion (optional)
  • 1 pkg. chicken sausage (or whatever sausage you choose)
  • 5+ Tbsp. olive oil
  • Seasonings of your choice (see note)

How to make your own bbq dinner in foil:

Grease the foil by drizzling some oil along the bottom

Start off by tearing off a large section of foil. I usually use about 18 inches of foil, give or take a couple inches. Use this to create a “dish” by folding up the outside edges. You want to be sure that your dish has at least a couple of inches depth on each side.

Drizzle 2-3 tablespoons of olive oil onto the bottom of your foil “dish”.

Next you will start to cut up your veggies and sausage and layer them in your dish. Start with the potatoes by quartering them. Then slicing each quarter into pieces with a thickness between 1/8-1/4 of an inch thick. You do not need to be exact. However, the potatoes will take longer to cook than the rest of the veggies, so the thinner the slices, the faster the cook time.

Layer the potatoes in the bottom of the foil “dish” and spread them out evenly.

The next layer is the onion, if using, and it should be diced up and spread evenly over the potatoes.

Next, slice the sausage into bite sized pieces, and spread over the onions and potatoes.

Finally, slice up the bell peppers into bite sized pieces. Spread them over the top of the potatoes, onions, and sausage evenly. Sprinkle your favorite BBQ seasonings on top!

Drizzle the remaining olive oil over the top. Cover with another piece of foil.

Transfer to a warm grill. Cook on low (350-400 degrees F) for 30 to 45 minutes, stirring occasionally; potatoes should be soft when done.

Take off the grill, let cool for a few minutes, and serve!

This recipe has become one of our most regular BBQ dinners in the summer. Honestly, I think a lot of it has to do with the fact that it is so simple and flexible. We have adjusted ingredients and seasoning here and there, and even amounts of each ingredient depending on what sounded good or what we had in the fridge.
