BBQ Dinner in Foil

This tasty bbq dinner in foil takes little prep time and can be adjusted to match your tastes or what you have in the fridge!

Ingredients
  

  • 3-4 medium size potatoes
  • 4 bell peppers I use a mix of colors
  • 1/4 – 1/2 medium white onion optional
  • 1 pkg. chicken sausage or whatever sausage you choose
  • 5 + Tbsp. olive oil
  • Seasonings of your choice

Method
 

  1. Start off by tearing off a large section of foil. I usually use about 18 inches of foil, give or take a couple inches. Use this to create a “dish” by folding up the outside edges. You want to be sure that your dish has at least a couple of inches depth on each side.
  2. Drizzle 2-3 tablespoons of olive oil onto the bottom of your foil “dish”.
  3. Next you will start to cut up your veggies and sausage and layer them in your dish. Start with the potatoes by quartering them. Then slicing each quarter into pieces with a thickness between 1/8-1/4 of an inch thick. You do not need to be exact. However, the potatoes will take longer to cook than the rest of the veggies, so the thinner the slices, the faster the cook time.
  4. Layer the potatoes in the bottom of the foil “dish” and spread them out evenly.
  5. The next layer is the onion, if using, and it should be diced up and spread evenly over the potatoes.
  6. Next, slice the sausage into bite sized pieces, and spread over the onions and potatoes.
  7. Finally, slice up the bell peppers into bite sized pieces. Spread them over the top of the potatoes, onions, and sausage evenly. Sprinkle your favorite BBQ seasonings on top!
  8. Drizzle the remaining olive oil over the top. Cover with another piece of foil.
  9. Transfer to a warm grill. Cook on low (350-400 degrees F) for 30 to 45 minutes, stirring occasionally; potatoes should be soft when done.
  10. Take off the grill, let cool for a few minutes, and serve!
