Instant Pot Chicken Noodle Soup

Easy, tasty, and fast twist on the traditional Chicken Noodle Soup recipe!

Ingredients
  

  • 3-5 Carrots or 1/2-3/4 c. Frozen Carrots
  • 1/2 c. Frozen Peas
  • 1/2 c. Frozen Corn
  • 1 lb. Chicken pre-cooked or raw
  • 8-10 oz. Bite size pasta of your choice
  • 4 c. Chicken Stock or Broth
  • 1 1/2 tsp. Italian Seasoning
  • 1/2 tsp. Thyme
  • 1/4 tsp. White Pepper
  • 1/2 tsp. Black Pepper
  • 1/2 tsp. Salt

Equipment

  • 1 pressure cooker electric

Method
 

  1. Slice the carrots into small pieces. Add the vegetables and the chicken to the pot. Pour in the seasonings as well.
    Put all of the veggies and the chicken in the pot!
  2. If you are using raw chicken: Do NOT add the pasta. Pour in the broth and mix things to combine. Set the timer using the Manual function for 10-16 minutes. While everything cooks in the Instant Pot, prepare the pasta on the stove according to package directions.
  3. If you are using precooked chicken: Add the pasta as well. Pour in the broth and mix things to combine. Set the timer using the Manual function for 0-1 minute.

  4. Allow the pressure to release naturally for about 10 minutes, then quick release the rest of the way. If needed, shred the chicken, add the pasta, and mix to combine.
