While most of us want to eat healthy, it can be difficult to think of new and tasty snack ideas filled with nutritious ingredients, especially veggies. Well, these mini zucchini pizzas are really fast to make, and they can be topped with whatever your favorite pizza toppings are. Plus, you don’t have to go through the work of making the pizza dough with this recipe. Whether you like to keep things simple or you just want to get in some extra servings of veggies, these mini pizzas hit the spot!

Zucchini is everywhere in the summer months. Whether you grow it yourself or are shopping at your local market or store, you’ll find that farmers and home gardeners all seem to have more zucchini than they can handle. While I love this vegetable, it can be difficult to find new and tasty zucchini recipes so you don’t grow tired of eating them. That is where these mini zucchini pizzas come in to save the day!
How did I come up with this idea? Well, within the past couple weeks, this recipe was born out of a need to use up some of the extra zucchini that had appeared in our kitchen from a generous neighbor. I had remembered my mom creating something really similar when her zucchini plant had gone crazy with its summer harvest when I was a kid, and I thought that it would be a great lunch idea for my Little Man and I to share. I really enjoyed it, but he was having a fit instead, so the jury is out on how much he likes the mini pizza bites.

One thing I especially loved about this recipe was how flexible it was to make. You could use just cheese as a topping, or you could go for it and load it up with leftover meat or veggies. It really didn’t matter what you did, or how exact you were in placing everything, because it all melted together. So simple and easy! For this mama, it was just what I needed for the moment.
My goal for today is to give you a new recipe that will use these veggies. My hope is for it to give you an opportunity to try them in a different way that isn’t too difficult to prep for and doesn’t take too long to try. If you can slice zucchini up in rounds, spoon on tomato sauce, and grate some cheese, you can make these mini zucchini pizzas yourself!

Is zucchini pizza healthy?
As with anything, the answer is “It depends.” When we compare zucchini pizza with regular, store-bought pizza, we see that zucchini pizza has a higher nutrition level and more health benefits than the regular pizza. However, the nutrition content of any food depends on its ingredients. Whenever we are looking at the health content of any food, it is important that we look at all of the ingredients that are a part of it as well as compare it to the conventional options available. Thus, the health benefits of the zucchini pizza you eat are going to depend on the toppings and ingredients that you choose to use.
Why is zucchini good for you?
Zucchini have a number of health benefits and are a great source of nutrition. Vitamin B6, Folate, Potassium, and Vitamin A are all found in zucchini, and it is often used in place of pasta to lower the carbohydrate levels in a meal. For this recipe, the zucchini is taking the place of the dough, which will create tasty zucchini pizza bites that contain less carbohydrates than their counterparts. (Source)

What toppings do you use for zucchini pizza bites?
The toppings that you could use for zucchini bites are nearly endless in my mind. Whatever you would think about putting on a normal pizza could really be done with these as well. Some of my ideas would be:
- Pepperoni
- Canadian Bacon
- Salami
- Deli Meat
- Sausage
- Bacon
- Chicken
- Fresh Herbs
- Chopped Onion
- Pickled Artichokes
- Spinach
There are so many more, but these are just a few ideas to get your creative juices flowing! Remember that zucchini has a mild flavor, so it goes well with many, many flavors. Plus as it cooks, it will soak up the delicious flavors of whatever toppings you put on it, which will make the whole thing just delicious.
Ingredients:
-Zucchini
-Tomato Sauce or White Sauce
-Grated Cheddar Cheese
-Toppings of Your Choice

How to Make Mini Zucchini Pizzas:
To start, preheat your oven to 425 degrees. Line your sheet with parchment paper or a reusable non stick baking liner.
Then you will need to cut up your zucchini into 1/4 inch slices. Lay your zucchini slices flat out on the baking sheet so that they don’t overlap.
Spoon the tomato or white sauce onto the slices evenly. It doesn’t have to be perfect, but you don’t want dry spots of zucchini.
Layer on your cheese and other toppings over the top. I tend to just spread everything evenly over the whole area since it is all going to melt together anyhow.
Bake in the oven for 20-30 minutes. If you have a lot of toppings, it may take longer for the cheese to melt and everything to be heated through. My example was just cheese, but you could do whatever combination of toppings you desire.
Remove from the oven carefully. Let cool slightly, and serve!
