Cinnamon Chip Cookies

My family really loves fall! In fact, it’s probably our favorite time of the year. Between the lovely cool weather, the start of hunting season, the beautiful changes in scenery, and so many more things, it just makes sense that we love this time of year.

Fall food is definitely something to look forward to. One of my hobbies is cooking, and fall allows for so many delicious options! A favorite around my house is cinnamon, so I thought I would share with you one of our favorite cinnamon recipes: Cinnamon Chip Cookies!

The idea for these delicious cookies came from my love of chocolate chip cookies and of snickerdoodle cookies. The end result was a mixture of the two styles, and it is one of the things I look forward to in the fall months!

These cookies are very simple, but very tasty. They have the base of a snickerdoodle, but the convenience of the chips (since with my little boy, I don’t always have time to coat each cookie in cinnamon sugar). Overall, they are a quick and simple treat that is perfect for the fall season (or really anytime).

What do you need to make Cinnamon Chip Cookies?

  • 1 cup unsalted butter, softened
  • 1 1/2 cup granulated sugar
  • 2 large eggs
  • 2 3/4 cup all purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons cream of tartar
  • 1/2 teaspoon salt
  • 1 package or 12 oz. of cinnamon chips
  • 1/2 teaspoon cinnamon

How to make Cinnamon Chip Cookies?

  1. Heat oven to 350 degrees. Line your cookie sheets with parchment paper or use non-stick spray.
  2. In a stand mixer, or with a hand mixer, cream butter, sugar, and eggs together.
  3. In a separate bowl, whisk together all of the dry ingredients except the cinnamon and the chips. Add to the butter mixture on low at first, and then turn on high until just combined.
  4. Add the cinnamon chips and cinnamon to the bowl. Turn the mixer on high for a few seconds to mix everything together.
  5. Roll or scoop the dough into even balls, and bake on the cookie sheets for 10-12 minutes. Let cool on the sheet for 2 minutes, and move to a wire rack to cool completely.

Ingredients
