Heat oven to 350 degrees. Line your cookie sheets with parchment paper or use non-stick spray.
In a stand mixer, or with a hand mixer, cream butter, sugar, and eggs together.
In a separate bowl, whisk together all of the dry ingredients except the cinnamon and the chips. Add to the butter mixture on low at first, and then turn on high until just combined.
Add the cinnamon chips and cinnamon to the bowl. Turn the mixer on high for a few seconds to mix everything together.
Roll or scoop the dough into even balls, and bake on the cookie sheets for 10-12 minutes. Let cool on the sheet for 2 minutes, and move to a wire rack to cool completely.
